
I recently saw these new cookie mix flavors at Target and really wanted to give 'em a shot on my own. After a bit of searching, I found a similar-looking cookie recipe and decided to test them out. I was worried that they'd be too sweet, but they turned out great! Bonus: it would be super easy to make these vegan! Recipe after the jump.
Orange Creamsicle Cookies
1/2 cup softened butter
1 cup sugar
1 tsp orange zest
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg
1/2 cup sour cream
1/2 cup orange juice
2 cups flour
Orange food coloring (optional)
Preheat your oven to 375°. Combine all of the dry ingredients in a bowl. Put aside. In a separate large bowl, beat the butter, sugar, and orange zest until blended. Beat in the egg, sour cream, and orange juice until well combined. Slowly blend in the dry ingredients, being careful not to over-beat. Place small 1.5 inch balls on a cookie sheet 2" apart and bake for 10 minutes or until the edges are golden brown. Allow them to cool on a drying rack.
Frosting
8 oz. cream cheese
1 stick of butter
1 tbsp orange juice
1 tbsp orange drink powder
Drop of orange food coloring
Blend all together until smooth. Frost your cookies!
For the frosting, I totally cheated and bought the Pillsbury Orangesicle Icing. It's tasty! I think these would even be great with just a plain cream cheese frosting. You can give it a shot and let me know!
